Testy Slow Cooker Hawaiian Pulled Pork Recipe

Slow Cooker Hawaiian Pulled Pork is a tropical treat for the whole family.

INGREDIENTS

– 1 (3.5- to 4-pound) boneless pork shoulder – 1/2 cup low sodium soy sauce – 1 1/2 cups low sodium chicken stock – 1 cup pineapple juice – 1/2 cup ketchup – /4 cup brown sugar – 2 Tablespoons minced garlic – 1 Tablespoon minced fresh ginger – 1 cup diced pineapple – 1 Tablespoon cornstarch EQUIPMENT: – 6-quart slow cooker

Put the pork shoulder in the slow cooker with most of the fat removed. Mix soy sauce, chicken stock, pineapple juice, ketchup, brown sugar, garlic, and ginger in a medium bowl.

Put the mixture in the slow cooker, cover, and cook on LOW for 8 hours or HIGH for 5.

After cooking the pork shoulder to 145°F, transfer it to a chopping board and pour half of the slow cooker liquid into a medium saucepan (discard the remainder).

Mix cornflour and 3 tablespoons water in a small bowl.  After the sauce boils, whisk in the cornflour mixture and heat until it thickens to syrup consistency and coats the back of a spoon.

Shred pork shoulder with two forks and place in a big bowl. Toss the pineapple and sauce together.
