Simple Pumpkin Spice Pretzel Bites Recipe

 – 4 1/2 cups all-purpose flour – 2 teaspoons kosher salt – 4 Tablespoons unsalted butter, melted – Vegetable oil – 2/3 cup baking soda – 1 large egg yolk beaten with 1 Tablespoon water FOR THE PUMPKIN SPICE COATING: – 1/2 cup sugar – 1 Tablespoon pumpkin pie spice – 4 Tablespoons unsalted butter, melted

Mix sugar, pumpkin pie spice, and water in a dough hook-equipped stand mixer. Top with yeast and let sit 5–10 minutes until foamy.

Add flour, salt, and butter to the bowl and mix on low. Knead the dough for 3 minutes on medium speed until smooth and pulls away from the bowl.

Get the dough from the bowl. Put the dough back in the bowl after washing and oiling. Leave the bowl covered in plastic wrap in a warm, dark place to double in size for one hour.

Preheat oven to 450°F and arrange racks in middle two places.Lightly oil two parchment-lined baking sheets.

Place 10 cups of water and baking soda in a large, heavy-bottomed stock pot and boil.Divide the dough into 6 pieces on your work surface. Skip flouring your work surface.

Roll each piece into a 1-inch rope and cut into 1-inch pretzel nibbles.The parts should be added to the boiling baking soda mixture in batches for 30 seconds, then placed onto oiled baking sheets.

Egg wash the bites and bake for 10–12 minutes, turning the pans midway.Remove soft pretzels from oven. Cool 5 minutes, then coat (recipe).
