Simple Brown Butter Banana Bread Recipe

Stuck with overripe bananas? A tried-and-true Brown Butter Banana Bread recipe adds warmth and nuts to a quickbread favourite.

INGREDIENTS

– Cooking Spray – 5 Tablespoons unsalted butter – 2 cups all-purpose flour – 1/4 cup white sugar – 1/2 cup packed light brown sugar – 1 teaspoon baking soda – 1/2 teaspoon kosher salt – 3 very ripe bananas (See Kelly’s Note) – 1/3 cup sour cream or yogurt – 2 large egg – 2 1/2 teaspoons vanilla extract

Heat the oven to 350°F. Wrap a 9-inch loaf pan with parchment paper and coat with cooking spray.

Over low heat, add butter to a medium skillet. Cook 5–7 minutes, stirring regularly, until butter foams and turns brown. (The milk solids will deepen and smell nutty.)

 Put the brown butter in a medium bowl to cool immediately. Butter burns if left in a hot pan. Mix flour, sugar, brown sugar, baking soda, and salt in a large bowl.

Mash three ripe bananas in the brown butter bowl. Whisk in sour cream, eggs, and vanilla

Mix wet and dry ingredients until mixed. Put the batter in the loaf pan. Bake the bread for 55–60 minutes until a toothpick comes out clean. After baking, let the bread cool in the pan before slicing and serving.
