Easy Mini Zucchini Muffins Recipe

Make delicious Mini Zucchini Muffins with warming spices and chocolate chips or nuts.  

INGREDIENTS

– Cooking spray – 1 1/2 cups all-purpose flour – 1/2 teaspoon baking powder – 1/2 teaspoon baking soda – 1 teaspoon ground cinnamon – 1/2 teaspoon kosher salt – 2 large egg – 1/3 cup extra-virgin olive oil – 1 cup sugar – 2 teaspoons vanilla extract – 1 cup loosely packed grated zucchini  – 1/2 cup mini chocolate chips or chopped walnuts (optional)

Heat the oven to 400°F. Grease tiny muffin pans with cooking spray. Mix flour, baking powder, soda, cinnamon, and salt in a large bowl. Whisk eggs, olive oil, sugar, and vanilla in a medium bowl.

Mix wet and dry components. The batter will be thick and hard to stir, but adding zucchini will loosen it. Ring out as much moisture as possible from grated zucchini in a kitchen towel.

Add grated zucchini and micro chocolate chips (optional) to the batter. Fill each tiny muffin tin cup with batter.

Bake muffins until a toothpick inserted comes out clean, 14–18 minutes. After baking, let them cool in the pan for 5 minutes before serving.
