Easy Glazed Honey Soy Chicken Thighs Recipe

This quick and easy Glazed Honey Soy Chicken Thighs recipe with rice, noodles, or veggies will change up your poultry routine.

INGREDIENTS

– 1/2 cup low sodium soy sauce – 1/2 cup honey – 1/4 cup fresh lime juice – 1/4 cup vegetable oil – 2 Tablespoons minced garlic – 1 Tablespoon minced fresh ginger – 2 Tablespoons chopped scallion – 8 large bone-in, skin on chicken thigh – 2 teaspoons cornstarch

Combine the soy sauce, honey, lime juice, vegetable oil, garlic, ginger, scallions, and ¼ teaspoon pepper in a large sealable bag. Put chicken thighs in the bag and carefully mix to coat. Put chicken in fridge for an hour.

Preheat the oven to 350°F with the rack in the middle. Line a baking sheet with parchment paper and an oven-proof rack.

Remove chicken from bag, keeping marinade. Shake excess marinade from chicken and set skin-side up thighs on baking rack. Bake chicken 15 minutes. Make the glaze while the chicken bakes.

Stir cornflour and 2 tablespoons water. Add leftover marinade to a small saucepan over medium-high heat.

 After boiling the marinade, mix in the cornflour slurry and heat, whisking occasionally, until the sauce thickens to syrup, about 5 minutes. The glaze must boil to destroy raw chicken germs. Remove hob glaze.

After baking, generously coat chicken thighs. Return them to the oven for 15–20 minutes until juices run clear and internal temperature reaches 165°F.Glaze and serve chicken after baking.
