Easy French Onion Pasta With Chicken Recipe

A family-friendly French Onion Pasta with Chicken recipe makes the warm soup a meal.  

INGREDIENTS

– 12 oz. uncooked short pasta, such as shells, rotini or orecchiette  – 2 pounds chicken breasts, cut into 1-inch cube – 3 Tablespoons vegetable oil, divided – 2 medium yellow onions, thinly sliced – 2 cloves garlic, minced – 1/4 cup dry sherry or white wine – 1 1/2 Tablespoons all-purpose flour – 1 teaspoons beef bouillon paste – 2 teaspoons Worcestershire sauce – 1/4 cup heavy cream – 1 Tablespoon fresh thyme leaves, plus more for garnishing

Bring a large saucepan of salted water to boil. Cook pasta till al dente. Reserve 1 ¼ cups pasta water, drain pasta, and set aside.

Add 1 tablespoon vegetable oil to a heavy-bottomed stock pot over medium-high. Once the oil is heated, add the chicken, season with salt and pepper, and brown on all sides until cooked.

Set aside the chicken in a bowl with a slotted spoon. Turn heat down to medium-low. The onions and garlic should be caramelised in 30 minutes after adding the remaining 2 tablespoons vegetable oil to the skillet and stirring as needed.

Stir in the sherry and simmer for 1 minute on high, scraping off any brown pieces. Stir in flour and fry 2 minutes.

Mix in beef bouillon paste, Worcestershire sauce, heavy cream, and 1 ¼ cups pasta water. Simmer sauce 2 minutes.
