Easy Cinnamon Roll Cookies Recipe

This Cinnamon Roll Cookies recipe adds warming spices and quick-fix icing to sugar cookies.  

INGREDIENTS

FOR THE COOKIES: –  cup unsalted butter, softened – 1 1/3 cups sugar – 2 large egg – 2 teaspoons vanilla extract – 3 cups all-purpose flour – 1/2 teaspoon baking powder – 1/2 teaspoon kosher salt FOR THE FILLING: – 1/4 cup sugar – 1 Tablespoon ground cinnamon  – 2 Tablespoons unsalted butter, melted and cooled FoR THE ICING: –1 cup confectioners’ sugar, sifted –1 Tablespoon unsalted butter, melted  –2 Tablespoons whole milk

Cream butter for 2 minutes in a stand mixer basin with a paddle attachment. Beat in the sugar for 2 more minutes until light and fluffy.

Beat in the vanilla essence, scraping down the sides, after adding the eggs one at a time.Beat in flour, baking powder, and salt until mixed.

After mixing, divide the dough in half and form each half into a flat square. Cover each square with plastic wrap and chill for 1 hour.

Put each dough piece between two parchment sheets. Roll each dough piece into a 14x11-inch rectangle using a rolling pin. Squaring the bottom.
