Easy Baked Corn And Zucchini Fritters (Oven Or Air Fryer) Recipe

This veggie-packed Baked Corn and Zucchini Fritter recipe cooks in minutes in the oven or air fryer.  

INGREDIENTS

– 2 medium zucchini – 2 cups fresh, frozen (thawed) or canned (drained) corn kernel – 1/4 cup chopped scallions, green and white part – 1 1/4 cups all-purpose flour – 2 teaspoons garlic powder – 1 teaspoon baking powder – 2 large eggs, lightly beaten – 1/2 cup heavy cream – Cooking Spray

The zucchini should be grated using the small hole of a box grater, and then it should be transferred into a bathroom towel.

Remove as much moisture as you can by ringing it out.
