Best Quick Leftover Turkey Soup Recipe

Got leftover turkey? This fresh vegetable and herb-filled Quick Leftover Turkey Soup dish is half way to a substantial, cosy dinner.  

INGREDIENTS

– 1 Tablespoon unsalted butter – 1 1/2 cups diced yellow onion – 3/4 cup diced carrot – 3/4 cup diced celery – 1 Tablespoon minced garlic – 2 teaspoons fresh thyme leave – 8 cups low sodium chicken broth or turkey stock – 1/2 cup uncooked pearl couscou – 3 cups chopped cooked turkey or chicken (See Kelly’s Note) – Grated Parmesan cheese, for serving  – Lemon wedges, for serving

In a large heavy-bottomed stock pot or Dutch oven over medium heat, add butter, onions, carrots, and celery.

Stir regularly until vegetables soften, approximately 5 minutes. Continue cooking for 2 minutes with garlic and thyme.

Stir in chicken broth and boil.  Simmer the soup after adding the couscous. Cover and boil for 10 minutes to tenderise couscous.

Season the soup with salt and pepper after adding the chopped turkey. Serve with Parmesan cheese and fresh lemon juice.
