Best Greek Cucumber Tomato Salad Recipe

This light Greek Cucumber Tomato Salad has cucumbers, garbanzo beans, and crumbled feta in a lemony red wine vinaigrette.  

INGREDIENTS

FOR THE DRESSING: – 1/4 cup red wine vinegar – 2 teaspoons freshly squeezed lemon juice – 2 teaspoons honey – 1 clove garlic, minced – 1 1/2 teaspoons dried oregano – 1/3 cup extra-virgin olive oil FOR THE SALAD: – 3 medium cucumbers, cut into 1/2-inch piece – 5 cups halved cherry tomatoe – 1/2 cup sliced red onion – 1/3 cup sliced black olives  – 1 (15-oz.) can chickpeas, rinsed and drained – 1 cup crumbled feta cheese

Mix red vine vinegar, lemon juice, honey, garlic, and oregano in a small basin. While whisking, add olive oil until emulsified.

Taste and salt and pepper the dressing before setting it aside. To prepare the salad, mix the cucumbers, tomatoes, red onions, black olives, and chickpeas in a big bowl.

Toss with dressing. Serve with feta cheese folded in. Note from Kelly:

Prepare this dish a day ahead and refrigerate covered for optimal flavour. Keep the feta separate and crumble it over the salad before serving.
