Best 20-minute Banana Fritters Recipe

Got overripe bananas? Instead of banana bread, make these light, fluffy 20-Minute Banana Fritters for dipping in warm caramel sauce.

INGREDIENTS

– Vegetable oil, for frying – 3 very ripe, darkly-speckled banana – 2 large egg – 1/4 cup sour cream – 4 Tablespoons unsalted butter, melted – 1 1/2 teaspoons vanilla extract – 2 cups all-purpose flour – 1/4 cup sugar – /2 teaspoon baking soda – 1/2 teaspoon ground cinnamon – 1/2 teaspoon kosher salt – Confectioners’ sugar, for serving – Caramel sauce, for serving

In a large heavy-bottomed stock pot over medium heat, add 4 inches of oil. Side-mount the deep-fry thermometer. Line a big plate with paper towels.

Mix mashed bananas, eggs, sour cream, melted butter, and vanilla in a medium basin.

Mix flour, sugar, baking soda, cinnamon, and salt in a medium basin.   Add wet ingredients to dry and mix until incorporated.

(Stiff batter) Add heaping 1-tablespoon scoops of dough to 325°F oil with a tiny ice cream scoop or two spoons.

Use several scoops of dough to fill the pot without overcrowding.   Fry the fritters for 3–4 minutes, flipping occasionally, until golden brown.

Transfer the fritters to the paper towel-lined dish with a slotted spoon.   Continue frying the remaining dough, returning the oil to 325°F between batches.
